The kitchen crops are planned together with the gardener and are nourished by their own food waste, which is transformed into fertilizer using the Bokashi method. Raw materials are harvested seasonally and used to create the varied menus. The goal is to reduce food waste, and they are constantly looking for ways to use all parts of the raw materials. One example of this is the popular "svinnlimpan," a bread baked from leftover bread that would previously have been thrown away.
